Description
when grouping values into classes for legend and symbol generation, a category "defined interval" would be nice. This could help to group values all 10°C for instance.

I believe you can get it by using the "graduated" classification. Or do you mean something else?

No.
"graduated" classification: class number is defined by user, QGIS does the sorting of the values and defines the class boundaries
defined interval: nummber defined by QGIS, user defines equal boundaries (steps) at which values will be split into classes

at least in the new symbology, in the graduated one, the user can add/remove classes and define manually the ranges.
